How to make the asparagus omelette, what we need

  • 5 eggs
  • 600 grams of asparagus
  • 120 grams of cottage cheese
  • 5 tablespoons of bechamel
  • 100 grams of provolone
  • A handful of raisins
  • A handful of pine nuts
  • A sprig of parsley
  • 60 grams grated Romano cheese
  • A leek
  • Extra virgin olive oil
  • salt
  • pepper

How to make the asparagus omelette, the preparation

  1. After washing the asparagus, remove the hardest part at the end
  2. Put the asparagus in a long and narrow pot in salted water and cook for 15 minutes: even if the tips come out of the pot it is not a problem they will cook anyway due to the steam.
  3. When cooked, drain and cut the asparagus into small pieces
  4. Finely chop the leek
  5. Put the asparagus and the chopped leek in a non-stick pan and sauté with a little oil and salt for 10 minutes, stirring occasionally with a wooden spoon
  6. Meanwhile, beat the eggs and season with pepper and salt
  7. Pour the asparagus into a fairly large bowl and add the beaten eggs, ricotta, diced provolone, chopped parsley, raisins, pine nuts, grated cheese
  8. Mix well until you get a homogeneous mixture
  9. Pour the mixture into the non-stick pan with a drizzle of oil and cook for 6 minutes over low heat and cover with a lid
  10. Turn the Asparagus Omelette to cook it on the other side with the help of the lid for another 4 minutes

Serve the Asparagus Omelette lukewarm or cold

Variation: the asparagus omelette can also be baked in the oven at 165 degrees for 20 minutes.
